Nothing feeds a but of hungry "not comedians" like this little dish. One vegan, one vegetarian and a bunch of carnivores can be a fussy bunch but this dish dellights em all. The cast was oh so dellighted to learn that Frito Lay Corn Chips, while chock full of heart cloggin grease, are completely vegan.


2 large cans Hunt's Chilli Beans
2 medium cans kidney beans
2 cans cut corn
2 cans whole black olives
1 medium yellow onion
2 bell peppers
1 big old bag of Frito Lay Corn Chips

Chop onion and bell pepper and fry in 2 tablespoons oil with garlic. When onions are transparent, remove from heat and let cool.

In a large casserole dish (or crock pot if your feeling extra trashy) layer chilli beans, kidney beans, onion and bell pepper, olives, corn and corn chips. Top with one more layer of corn chips. Bake at 350 for one hour or cook in crock pot on high for 4 hours.
